Delicious offerings at The Dining Room at Hillbark


Hillbark Hotel & Spa, Wirral’s only five star rated hotel, has added yet another string to its bow this year with the award of three prestigious AA Rosettes for the hotel’s fine dining restaurant, The Dining Room at Hillbark.


Rich Collingwood took over the helm as Head Chef nearly seven months ago and his innovative use of ingredients and flavour combinations has since gained him this deserving title.


Collingwood explains; “Receiving this accolade so soon into my career at Hillbark Hotel is the ultimate praise but to also work within the smallest five star hotel in the UK is a great accomplishment. The aim for The Dining Room at Hillbark when creating our dishes, is to give the maximum emphasis to flavour and let the ingredient shine through the dish.


Collingwood has worked for over ten years in the industry, learning his craft under culinary heavyweights such as Michael Caines and Chris Horridge. Using this experience and knowledge about food, he has been inspired by the science behind ingredients and enjoys exploring new concepts before entering into any new menu or dish creation. Rich continues;


“I would never jeopardise technique over flavour - making the most out of beautiful produce inspires me to push myself and my team to break the boundaries of contemporary fine dining. I can’t wait to work with the team to push further in the industry and gain more recognition.”


Only 10% of restaurants nationwide achieve a standard worthy of one AA Rosette or more and only 10% of restaurants within the AA Restaurant Guide can boast three AA Rosettes or more, placing Rich Collingwood in excellent company.


A classic example of Collingwood’s pioneering dishes include middle white suckling pig, oxidised pear with liquorice carrot and dark chocolate delice with parsnip ice cream.
