Marc Wilkinson, Fraiche - Number one restaurant in the Sunday Times Top 100

Wirral’s Fraiche has been named number one restaurant in the UK by the Sunday Times.

The restaurant in Oxton is owned and run by Huyton-born chef Marc Wilkinson. The guide said: “Marc Wilkinson has done for Merseyside’s cuisine what the Beatles did for its music, with talent, flair and originality, he has taken his restaurant Fraiche to the top of the charts.”

Mr Wilkinson told the ECHO: “Wow what an incredible achievement. I feel very lucky to have been chosen from so many fine restaurants in the UK, it is without doubt an honour and a real highlight to my career, a huge thank you to our guests and staff that have supported me.”

Last year Fraiche was positioned at number six in the list – a huge achievement in itself considering it was one of the only one-chef restaurants on the list.

As well as Mr Wilkinson it employs just two waiters and a pot-wash.

Simon Radley’s Chester Grosvenor was also in the list at number 14.

It has been a successful few weeks for much-loved Wirral eaterie Fraiche, which serves only around 10 diners each evening and books up months in advance.

It was recently confirmed as also the only restaurant in Merseyside to win a Michelin star in the 2015 guide. This is Mr Wilkinson’s seventh consecutive star.

The compact restaurant was also listed in the top 20 restaurants in the country and given a cooking score of eight by the Good Food Guide, who were full of praise for Mr Wilkinson’s imaginative and painstakingly detailed dishes.

Mr Wilkinson added: “Hard work and single minded perseverance has made this possible and a dream becoming a reality.”

The guide said: "Marc Wilkinson has done for Merseyside's cuisine what the Beatles did for its music, with flair, originality and originality, he has taken his restaurant Fraiche to the top of the charts."

Last year Fraiche was positioned at number six in the list.
