AA recognises Hillbark Grill Restaurant with two rosettes

Hillbark Hotel achieves 2 AA Rosettes for its Grill Restaurant

Hillbark Hotel & Spa, Wirral’s only five star rated hotel, are welcoming more and more allocades this year with their Grill Restaurant being awarded two prestigious AA Rosettes.


The Grill Restaurant at Hillbark Hotel & Spa, specially combines wholesome British food, with a contemporary flair, set in the charming oak panelled Grill Room of the hotel.


Starting as a Commis Chef over 6 years with the hotel group, Head Chef, Ashley Moran, took over the helm of the Grill Restaurant nearly 2 and a half years ago, guiding his team to this very deserving title on their use of top quality ingredients and classic dishes.


Head Chef Ashley Moran explains;


“Myself and the team have worked so hard to achieve this recognition and I am excited about the next step for the restaurant. I am extremely passionate about sourcing the finest ingredients for our dishes to ensure the ultimate meal for our customers. I am immensely proud of the whole team.


His menu was praised for its innovation, technical skill, consistency and judgement in combining and balancing ingredients.

Moran’s menus are filled with classics such as fish and chips and sticky toffee pudding with top favourites including the sharing dish of a whole Chateaubriand or an impressive Apple Tarte Tartin.


AA rosettes are awarded by AA hotel and restaurant inspectors with only 10% of restaurants nationwide being deemed worthy of one rosette or above.

To receive two rosettes, a restaurant must be of excellent standard, precision must be apparent in the cooking and there must be obvious attention to the selection of the quality ingredients.

This latest honour comes only a couple of months after The Dining Room at Hillbark received 3 AA Rosettes, putting their grand total to 5 AA Rosettes for the hotel as whole.

Our dedicated team have worked attentively together to deliver such consistent high standards of service, creating outstanding diner experiences for both restaurants. We are very proud to represent this standard of dining in the North West.”
