As part of Wirral's Year of Food, Chef Julian Davies, who runs the restaurant with wife Jackie, is dedicating July to the best of fish Britain has to offer.
Julian says "Each week I will source four different fishes. For example, this week it's crab, sea trout, mackerel and dover sole."
"It is amazing what Bristish waters can yield - not many people know that we even have squid."
July is a busy month as Julian is also working on the new summer A La Carte menu.
